Cauliflower Rice

I'm so excited for this new addition to our diet and had to share! 
Instead of actual rice with our meals, we'll now be eating cauliflower rice. 

The best part? How healthy it is!

1 cup rice = 200 calories (average)
1 cup cauliflower rice = 25 calories (average)

Excited yet?


Looks the same as rice. 
Tastes the same as rice.
Has the same consistency as rice.

You NEED to try this! 

It's super simple to make. All you do is chop up the cauliflower a bit, throw it in a food processor for a while, then put it in a microwave safe dish with about a tablespoon of water and heat for around 7 minutes. Then garnish with whatever you normally would rice! 



We love spray butter in this household. Zero calories and tastes exactly the same. I also like cauliflower rice with cilantro or rosemary. It's definitely a versatile side dish and we can't wait to try it with sweet and sour chicken next!

  18. That sounds delicious! I'll definitely give that a try, especially since we get a lot of cauliflower in our CSA. I discovered spray butter when I was on Weight Watchers and pretty much thought it was the best invention ever.

  28. I made cauliflower mash once and I seriously need to do it again because it's delicious and and awesome alternative to potatoes/rice. We're totally obsessed with spray butter in our house too. I literally use it on everything!

  34. OMG! This is BRILLIANT! We made the cauliflour mashed potatoes a couple of weeks ago and loved them but this might actually be something the twinners might eat! and I have a brand spanking new head of cauli just waiting to be chopped :)
